Muffins That Taste Like Donuts


These are John's favorite muffins.  They might be mine too although I tend to like almost all muffins except dried out store bought ones... muffin snob.  These are super easy to make and pretty quick.  I made them last Saturday for John when he woke up requesting donuts and I had no intention of frying donuts or going out to get them.  These are dipped in butter and rolled in sugar.  What doesn't taste good dipped in melted butter and rolled in flavored sugar?  Nothing... is the right answer.

I didn't take pictures of the process because I wasn't planning on posting the recipe but last minute decided it would be ok to share this tasty goodness.  You probably have everything you need already in your pantry!  Make them tomorrow morning for your fam or Sunday before church and you'll be much appreciated.  They also keep really well for a couple of days.  It's like the sugar holds in all of the moisture. They don't really last very long in our house to find out just how long they could keep and probably will not in your house either...

Here is what you need:

1 3/4 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
1/3 cup oil
3/4 cup white sugar
1 egg
3/4 cup milk

For the Topping:

1/2 cup melted butter
2/3 cup sugar
1 1/2 tbsp cinnamon

Here is what you do:

Combine your dry ingredients (flour, baking powder, salt, nutmeg & cinnamon) in a bowl.  In another bowl combine your wet ingredients (I hope you know what your wet ingredients are if only by process of elimination).  Add your dry ingredients to the wet and stir only until combined.  Don't stir this batter to death or your muffins will taste dry and tough and like they came from your local grocery store.  No one wants to wonder whether you purchased these or made them... that look after they bite in and wonder "did she buy these?  They aren't even good..."  That will happen if you stir the crap out of the batter.  Ok moving on...

Bake in your muffin pan at 350 degrees for about 15-20 minutes.  They won't darken, they will get a little golden but be sure to test and get out of the oven before they dry out.  Again, the store bought taste.

While your muffins are baking melt the butter in a bowl and combine sugar and cinnamon in another bowl.  Measurements do not have to be exact.  I tend to use a lot of butter and sugar on mine b/c I like to soak the butter up and then encrust the muffin with sugar... to each his own.

So once your muffins are done take them out and immediately dip them entirely in the butter and roll the whole butter soaked muffin in the sugar mixture.  The whole thing, not just the top.  If you're worried about how much sugar is in this recipe then move on because I'm not here to tell you about a healthy breakfast... if you're still reading, roll the whole muffin in there and place it on a pretty plate.  Slap hands away until you've completed the entire batch, grab three for yourself and run away with them to enjoy in a private place.  This makes around 10 muffins.  John and I eat all 10 in two days... don't worry we work out after...hahaha no.

Hope you enjoy!!  It's a good recipe to whip up when you have company.  Perfect breakfast is a quiche or breakfast casserole, these muffins and a fruit salad.  Guess I know what we'll be having in the morning for breakfast!
