Simple Breakfast

I've been on a meatball and oatmeal kick these past few weeks.  Easy breakfasts and dinners have been super important since I've been working 4 days a week rather than my previous 3 days.  That 4th day really throws a kink in my ability to get chores done like feeding my family.  Hopefully it isn't a permanent thing and I can go back to the 3 days when things calm down a bit at the office.

This is my go to breakfast for Ann and I.  You can mix it up as much as you want but this is our favorite version:

What You Need: (for 1 adult serving and 1 baby serving)

1 cup whole milk (or 2%)
1/2 cup oats (not quick cooking or 5 minute or whatever those are)
3 whole dates
1/2 apple
pinch cinnamon
pinch nutmeg

What You Do:

Chop up your dates and refrain from eating them.  In a small saucepan pour the milk and add the dates.  Bring to a rolling boil and add oats.  I like adding the dates at the beginning because they cook into the milk and release their natural sugars which means you don't have to add sugar!!  (No one needs to know how much brown sugar I was adding to my serving of oatmeal before dates entered the picture... no one.)

Stir pretty continuously until the oatmeal is thickening.  Throw in a pinch of cinnamon and nutmeg then take the apple.  Grab a grater and grate apple into the oatmeal.  Keep stirring until it is as thick as you want it then slap some on your baby's highchair tray and grab a spoon.  No unnecessary sugar and it fills you up until lunch (or your 10 o'clock snack... however you experience your morning). 

Ann absolutely loves this and likes to wear her oatmeal too.  It ends up in our hair, our (her) diaper and in both of our noses.  We shower after breakfast...

Bananas are good, peaches, apricots... any fruit.  I think the key is milk and the dates.  Build on that.

I'll share our most favorite meatball recipe tomorrow!  Pictures are not included with either because we have consumed the food before the camera made an appearance.  You know what oatmeal looks like... not appetizing.
