Toffee Banana Pie

This is such an easy pie to make and soooooo good.  You could also adapt this to a fabulous banana pudding recipe.

What You Need:
3 Bananas
1 Can sweetened condensed milk
2 Cups heavy whipping cream
Sugar
1/4 Tsp vanilla
Graham Cracker Crust
Chocolate Bar
A Mixer
Pie Dish.... thought I would say it since I said mixer


What You Need To Do:

First, and you can do this a day in advance if you like (I did), you need to take your can of sweetened condensed milk, the best baking item in the world, and remove the label.  Then put the can, sealed, in a pot of boiling water for 2 1/2 hours.  Make SURE this can stays covered with water the entire time or bad things will happen and you'll RUIN everyone's day that is expecting this pie. I had to add water 3 or 4 times so keep an eye on it.



Next you will make your graham cracker crust, or if you want you can purchase one already made.  I don't think it makes a difference unless you're anti buying things pre-made then of course make your own.  I like eating the butter and crumb mixture left in the bowl after mixing them together so I tend to make my own.  Purely for that reason.


While you're letting the crust cool you can make your whipped cream.  Please make your own, cool whip is not ok.  I think cool whip is never ok and should be banned because it has no flavor.  Take a carton of whipping cream, pour two cups into your mixer and add a little sugar for added sweetness.  Also add your vanilla (as much or as little as you like).  Set your mixer on high with the whisk attachment and watch it turn into a thick goodness.  Don't let it beat too long or you'll end up with sweet vanilla butter and as good as that sounds it will not work for this pie.



Now let that sit for a minute and slice up your bananas.  Add those to your pie crust.


Now it is time to reveal the magic that happened in that little can of goodness.


Such an exciting thing!  It turns into the richest toffee.  Stir it up then mix together with your bananas in the crust.


Now you can add your whipped cream, not cool whip.  Just spread it evenly to cover the goodness you have just created with 3 simple things.


Now, and this is only if you want to, grate some white or dark chocolate on top.  I did, just because I like using my zester for whatever I can.  After you do this stick it in the fridge for a couple of hours then serve!  Warning, mine did not cut perfectly into slices, it was kind of messy but I don't mind scraping toffee combined with whipped cream and crust off my plate...maybe with a fork, maybe not.
