Sausages With White Beans

Well, I had pictures of last night's dinner to share with you today but my phone freaked out this morning and when I tried to upload to my computer everything was erased.  Including precious pictures of Ann in her first car.... ugh, that is what I get for using my phone to capture memories.  Back to the large mom camera.

You know, this was just supposed to be a recipe but today has been a real test of my patience.  It started with exhaustion from Ann being up most of the night with what we now realize is just a tooth coming in rather than the ear infection I took her to the doctor for this morning.  Leading up to scrambling for a shower to go to the doctor a series of events happened that included my favorite, FAVORITE, bronzer falling out of my hand onto my tile floor and breaking everywhere.  Ann proceeds to crawl through it and in doing so ground it into my bathroom tile grout and also tanning her legs in the process.  Glad it wasn't an ear infection but still... she could have stopped pulling on her ear and crying so that I could get a real feel of what the situation actually was.

THEN, then... we finally get word on our offer that we submitted last Thursday with a 24 hour turn around time that they couldn't meet and we generously gave them four additional days to respond with. Well, their response could have been given to us verbally last Thursday night by saying "We know nothing about real estate, nor does our Realtor, and we have zero common sense therefore we are coming back with a price $900.00 lower than our asking price and we would like to occupy 63 days rather than 60 days and the 3 days, can they be at no rent?  No.  No, no NO!  NO.  I sent comps to back up our offer, I explained in written form and verbally over the phone why we offered what we offered and how the market may not even support that offer so to please explain that to the sellers.

Looks like John will be making a trip to the liquor store down the street and grabbing a bottle of my favorite white wine chilled so cold that I can barely drink it while soaking in my bathtub that is also Ann's bathtub because we have one full bathroom rather than three that this new house would have provided.  I do not want to come across as bitter, or rude or a know it all but friends.... I know this real estate market and I am reassured in my choice to practice commercial real estate rather than residential because of the emotions attached to people's personal homes after this experience.  I cannot handle the arguing over whether a bathroom intact from the day it was built in 1962 is dated or not.  It is... you can't argue with that.  Therefore a dated home brings less per square foot than a home completely gutted and remodeled that was designed and built by a renowned architect that studied under Frank Lloyd Wright.  How do the two compare?  They don't.  Ahhhhhh I need that wine right now.

Here is the recipe.  It has wine in it.  It is good, easy and on the healthy side.  Thanks for reading the above only to get to this recipe.  I should have put a disclaimer at the top to scroll down if you didn't want to hear me whine but I didn't want to.

What You Need:

1 1/2 lbs hot Italian sausage or sausage of your choosing
1 cup white wine
2 tbsp olive oil
1 yellow onion diced
1 bell pepper diced (red, green, yella, you choose)
2 cloves garlic minced
2 cans white beans drained (great northern, cannellini, doesn't matter)
2 tbsp italian seasoning
3/4 cup chicken broth
baby spinach

What You Do:

Prick the sausages in a few places and place them in a large skillet with a lid.  Add 1/2 cup of the white wine to the skillet and sausages and bring to a boil over medium high heat.  Cover and reduce to medium low to simmer for awhile (5 minutes should do it).  Uncover the pan and and raise the heat back to medium high and cook the sausages turning every once in a while until they are well browned. Transfer to a plate once they reach that crispy brown stage.  Not burned, but crispy brown skin.

While the sausage is doing its thang take a separate large skillet and add the diced onion and bell pepper to the olive oil and saute.  Saute until they are translucent and beginning to brown.  add the garlic and stir constantly for about 30 seconds so it does not burn.  Add the beans, Italian seasoning, the remaining 1/2 cup of wine and the broth.  Bring this to a boil and reduce the heat to medium.  Simmer this uncovered until the liquid reduces by half.

Once you are done and ready to serve, take your fresh spinach and put desired amount on your plate.  Serve the beans and sausages together over the spinach using the remaining liquid in the skillet as a sauce.

This was fabulous.  We loved it.  I had a great picture too that totally looked appetizing but this isn't hard and you do not need pictures to get it.
