Another good weeknight meal! Some people judge others who use cream of anything in their cooking and I say those people are just jealous that "our" meals taste so good and that "we" are not so frightened of an extra lb to eat something other than steamed veggies.... so there. Actually I wish I liked plain steamed vegetables and didn't feel the need to have cream in my food but that's another issue.
I will not provide a picture of this meal because it was impossible to take a picture of this mess of sauce and mushrooms that looked anything close to appetizing. You've all seen those nasty food pictures that make you definitely NOT want to make that dish.
Here is what you need:
1 lb chicken breasts or tenders
2 tbsp of olive oil
8 oz fresh mushrooms, sliced (I used baby bellas)
1 onion, diced
2 cloves of garlic, minced
1 can reduced fat low sodium and anything else you can do to make it healthier cream of chicken soup
2/3 cup nonfat sour cream
pepper to taste
Yolk-free noodles
Here is what you do:
Cut the raw chicken into small bite size strips. Heat 1 tbsp of olive oil in a heavy skillet and brown the chicken on all sides until cooked through. Remove the chicken.
Add another tbsp or so of olive oil and add your mushrooms, onion and garlic. Saute until the veggies are tender. This was about ten minutes.
Stir the "soup" and sour cream into the veggies and simmer.
Add the chicken and cook until the chicken is heated through. This probably will not need any salt but add some pepper to your liking. I like a lot.
Serve over yolk-free noodles.
Ok, so side note: Ann hangs out in the kitchen with me when I'm cooking and having this little audience has turned me into the person who acts like they are on a cooking show. I tell Ann everything I'm doing in hopes that she absorbs some of it on a subconscious level and in turn will grow up loving to cook and ok I'll be completely honest it's much more fun to cook a meal when you are pretending to have your own show. I'm WAY cooler than 97% of the weirdoes on the Food Network who actually do have their own show and my baby girl can attest to that. Ummmm I even put all of my ingredients in special little bowls so I can pretend I had a prep team that did it for me and I toss that cute little glass bowl of garlic already minced into the pan and saute... Totally a waste of dishes and time but Ann likes it... all for Ann. And if I ever take pictures of recipes again it will look nicer!
I feel better confessing this creepy thing Ann and I do.
