I made this for John and I last week and it turned out delicious. It's a really easy recipe and may be more in tune with fall just because it's apples and cinnamon but we certainly enjoyed it!
John walked in from work and asked me if I was baking an apple pie... no.
What you need:
1 orange
2/3 cup cinnamon apple sauce
1/4 cup balsamic vinegar
1/4 tsp ground nutmeg
1 lb chicken breasts (or chicken tenders like the pic)
2 tsp olive oil
What to do:
I used chicken breasts and pounded them out to be thin so they would cook quickly and not be this heavy lump of chicken. I am having issues with chicken the later in this pregnancy I get. I can almost not eat it. Almost... unless it's fried. I can eat it fried. But only if I don't fry it. Wait... I have never fried my own chicken, that's what Mom and John are for.
First things first: Zest your entire orange, if it's a huge orange just zest what you want. I used a smallish orange. Then juice it. So much work for so little juice. John can rest assured he will never have freshly squeezed orange juice waiting on him for breakfast.
In a small sauce pan combine the orange juice, apple sauce, vinegar, nutmeg and salt and pepper to taste. (I made my own apple sauce and took a fresh stick of cinnamon and ground it up in a mortar and pestle). Not.
Bring all of this to a boil then reduce it to low. This will simmer away for about ten minutes. Remove it from the heat.
In a skillet heat up your oil and salt and pepper the chicken. Brown chicken on medium high heat on one side then flip it. When you flip it put a little of the sauce on it while the other side browns.
Remove from heat and top with the sauce! We had this with sauteed green beans and creamed corn. I love fruit sauces on meat and this would be great with pork tenderloin if you have a problem with chicken like I do now.
I did not take pictures of this because... I didn't. This recepe is from Better Homes and Gardens and they took a picture that is way better than anything I could have taken so here you go! I did not style the chicken with orange peel and fresh herbs... John wouldn't know what to do if our food was this pretty!
I'll be making a really bad for you but HAS to be good pie this weekend. For myself. John can have one piece. Ann can have 10. Hint: It contains sweetened condensed milk that turns into something magical when you boil it for 2 1/2 hours. Now what wouldn't be good with that?!
