Easy Dinner - Chicken & Corn Chowder

I have neglected my blog for far too long.  To be honest, I just haven't been motivated to do anything lately.  The snow makes me lazy.... the cold makes me want my couch, a blanket and Tara's warm cuddles...  I haven't touched my house projects and cooking has been pretty simple and nothing to brag about.

Today was sunny and in the high 60's so I am recharged and BACK!

Here is a great dinner that I made this past week when we had two feet of snow on the ground.  Heads up: Not healthy.  I love chowders...you could put anything in heavy cream and I would probably eat it.  This is a simple one and actually does not contain half a cup of butter so convince yourself it's healthy and go for it!

Now when I made this I was still in lazy  mode so I didn't take step by step pictures for you.... let's use our imaginations and see if we can make it without pics.  I trust you can.  If you can read you can make it.  If you can't read then props to you for being on a computer and a blog and I'm sorry I don't have more pictures to keep you entertained.

What you need:

Bacon - 4 slices (PEPPERED)
Bell Pepper
4 cups frozen corn - I like white and sweet corn for this
Potatoes - 3/4 a pound or however much you want
3 Cups Chicken Broth
1/2 White Wine
3/4 Pound chicken breasts diced
6 Green Onions - white and green diced up
Fresh Thyme 3 tablespoons
2 1/2 Cups Half & Half (I used heavy whipping cream... who's gonna tell me it wasn't better?)
Salt and Pepper

What you gotta do:

Cook your bacon until super crisp.  You will crumble it later so people who like floppy bacon, suck it up and cook it all the way.  Keep your bacon fat in the skillet.  You're going to use it!  Yes you are!

Add your diced up bell pepper, corn and diced up potatoes to the bacon fat and cook on medium heat.  You want the pepper to soften up and the corn and potatoes to have a little bit of golden color to them.  This is about 5 minutes.

Add the broth and wine to the veggies and bring to a boil.  Cook until the potatoes are tender.  This is about 5 minutes.

Add your diced up raw chicken and cook, covered, until the chicken is fully cooked.  This only took about 5 minutes as well.

Next you'll stir in your green onions, the fresh thyme and cream.  Bring all of this to a simmer on medium.  Once it begins to simmer bring the temp down to medium low and cook, uncovered, until all of it is heated through.  About 5 minutes as well to let all the flavors meet each other.

Add your salt and pepper to taste.  Please taste before adding salt... it barely needed it.

Serve it in a bowl with crumbled bacon on top!!  Do not leave out the bacon because it makes the soup.  I love bacon...I love bacon!  I love bacon hey hey hey HEY!

One more thing!!

I just picked up this book called "Inside Of A Dog" by Alexandra Horowitz.  The author is supposedly a scientist who will explain how dogs perceive their daily worlds, each other, and humans.  I'll let you know how it is!  It looks really good and sweet and we all know I have a small, teeny tiny obsession with my own two stinky canines so I'm sure I'll believe every dang thing she says.

Here's a picture of the last of the record breaking snow we were so blessed with this past week.  Most everything has melted away and I can actually see some grass in my yard!!  It DOES exist!
